Cooked fish with white wine sauce and cauliflower mash. Mothers delicious version and my attempt

Boil fish- or vegetable stock, bay-leaf, pepper, salt and half a yellow onion for about 15 minutes.

Add the fish and let simmer for about 10 minutes until it is done.

Remove the fish and add double cream to the sauce. Let boil until it is somewhat reduced. Add philadelphia cheese to thicken the sauce. Add the fish again and serve with vegetables or in this case cauliflower mash.
