Resistent starch MCT smoothie

In a magic bullet type personal blender mix together roughly 2 dl cold water, 1-2 Tbsp MCT oil, some probiotic drops, 2 Tbsp potato starch (resistant starch), a few frozen blackberries and stevia drops. & mix.


Almond milk – home made

I soaked one handful of almonds in a cup with water in the fridge over night. I switched the water in the morning and ten mixed it in the blender with only a little amount of water (maybe 2 dl at most). It took a little patience and mixing to get it filtered (not nice drinking it with the small pieces). The milk was sweetened with 2 stevia drops.
The left over pulp can be used for other foods so don’t throw it out. One great application is porridge, see below!

Low carb smooth faux porridge

30g butter
1 egg
1/2 dl double cream
Small a pinch of salt
2 Tbsp almond flour
1 tsp psyllium seed husk
2 droops of stevia

Add the butter to a pot and let it melt. Remove from stove and add remaining ingredients and start whisking.

Today I used fresh almond pulp instead of almond flour, which I had saved from making almond milk earlier today. That was pretty nice.


Thin flour less Swedish Pancakes with quick raspberry jam and whipped cream

3 dl full fat milk
6 eggs
1,5 Tbsp psyllium seed husk powder
Pinch of salt
3 droops of stevia?
1/2 tsp vanilla extract

Add all the ingredients to a blender (psyllium last, just before you turn it on).
Mix for 30 seconds then immediately transfer to a bole and let thicken for 5 minutes.
Fry the pancakes in butter or flavorless coconut oil.

For quick raspberry jam. Defrost 100-200g of raspberries until they are warm (50 degree C?) sweeten with stevia/erythritol and sprinkle (very thin while stirring/mixing) about 1/2-1 tsp gelatin powder.

Serve this treat with whipped cream!!


Cabbage Carbonara!

This is basically a regular carbonara with the pasta replaced with thin shreds of cabbage that has been boiled in salted water for 5 minutes.
Then add a mix of double cream and 3 egg yolks that has been whisked together and also a bunch of Parmesan.
Then add fried bacon in prices that have had chopped yellow onion and garlic added to it.
Salt, black pepper and extra Parmesan!
