Thick low carb (paleo) delicious pancakes

PANCAKES

Pancakes:

4 eggs

2 Tbsp creme fraiche

WHISK THESE TWO TOGETHER PROPERLY, then add:

1-2 Tbsp coconut flour

2 dl coconut milk or almond milk (without sugar)

1 Tbsp psyllium seed husk powder

1 Tbsp gelatin powder (optional can be replaced with 0.5 Tbsp psyllium)

Some vanilla powder

Stevia/sweetener

Salt

MIX IT ALL TOGETHER, preferably with an immersion (hand held) blender.

LET SIT AND THICKEN FOR 5-10 MINUTES AND THEN FRY IN BUTTER OR (flavor free) COCONUT OIL

Topping:

Mix 1 dl blackberries (or other berries) with 2 Tbsp creme fraiche and some stevia/sweetner to taste, keep refrigerated until served.
