Sugar free LCHF Fudge

100g butter

1 dl almond butter

200g cream cheese

Some vanilla

(Sugar substitute equal to 1 Tbsp sugar)

1/3 dl vanilla whey protein powder

1/3 dl cocoa powder

Dash of salt

Optional: some chopped walnuts, cocoa nibs, chopped very dark chocolate etc.

Melt butter slowly in a small pot, add the almond butter and vanilla and set a side when melted. Add the cream cheese and whisk vigorously until it all comes together to a smooth texture. Quickly whisk in the dry ingredients (preferably already mixed together in a small bowl) and with a spatula scrape down the fudge into a small container with lid on it to then let it settle in the freezer. 



Panna cotta

3 dl double cream

1 tsp gelatin powder

Vanilla (half a pod and maybe some cinnamon and cardamon pods) or other flavour

Stevia/erythritol sweetner

1 Tbsp cold water

Mix the gelatin and cold water, let sit for 5 min.

Bring the cream and vanilla to boil in a pot (1-2 minutes) add the sweetener (after this) and remove from heat. Add the gelatin and whisk vigorously for a few minutes.

Pour into cups or a bowl and let settle in the fridge or at least 2 hours.
