Chorizo veggie fry

  
The base of this is just some sliced salami (in this case chorizo) and diced Aubergine. These are fried properly in a pan with butter or olive oil. I usually add red bell pepper and/or cauliflower, all in small pieces. This time I also added a little lettuce just before serving (so it softens just slightly). Stirr in pesto Rosso and potentially 1 Tbsp mayonnaise and a few drops of stevia ketchup of tomato pure with a drop of stevia or two.

Serve with some boild eggs and herb salt and e.g. fresh herbs if desired.
