Jummy mayonnaise

Mikrowave/melt 100g butter in a glass jar. Add 1 dl cold pressed rape seed oil. 0.3 dl avocado oil and 0.3 dl olive oil. Crack two room tempered eggs into the jar and make sure the yolks reach the bottom of the jar. Add 2 Tbsp white balsamic vinegar. 1 Tbsp mustard. 2 drops of stevia. 1/3 tsp salt and some pepper. Mix with an immersion blender, firmly placed at the bottom, on the egg yolks. Mix until smooth.


Apple cake

I had this wonderful cake from the Swedish page

It was moist and a little crusty on top and quite delicious! 


3 dl almond flour

Sweetner corresponding to 75g sugar (stevia+erythritol is my preferred choice) 

125g melted butter

0,5 dl double cream

2 tsp baking powder

1 tsp vanilla powder

2 Tbsp cinnamon

4 eggs

4 apples high in acid

50g butter (for the apples)

Turn on oven to 180 (hot air) or 200 degrees (regular oven). Butter a pan (22cm diameter). Whip eggs and sweetner until white and fluffy. Melt the butter and add together with the cream to the mix. Blend the dry ingredients first then add to the batter. Peal and make wedges from the apples, fry in 50g butter and some cinnamon dusted on top and let simmer for 30 sec. Pour the batter in the cake mold and shove down the apples. Bake in the lower section of the oven for about 45 min. I just had mine in 35-40 min.. I think the cinnamon was supposed to only been used on the apples but I really liked it this way – 2 Tbsp in the batter and a little extra on the apples.  

Serve with some whipped cream with some vanilla essence.
